You should try it

Ok, so my many apologies for not including the recipe. It is more work than a pre-made mix, but in my opinion very much worth it. Now this recipe actually makes more than what we use, maybe because we always have eggs and bacon with them, so anyways, we half it and it works out great.

Waffles
1 ¾ cups all purpose flour
1 tablespoon baking powder
¼ teaspoon salt
2 egg yolks
1 ¾ cups milk
½ cup cooking oil
2 egg whites

In a medium mixing bowl stir together flour, baking powder, and salt. Make a well in the center of dry mixture; set aside.
In another medium mixing bowl beat egg yolks slightly. Stir in milk and oil. Add egg yolk mixture all at once to the dry mixture. Stir just till moistened (Batter should be lumpy).
In a small mixing bowl beat egg white till stiff peaks form (tips stand straight). Gently fold beaten egg white into flour and egg yolk mixture, leaving a few fluffs of egg white. Do not overmix.
Pour 1 to 1 ¼ cups batter into grids of pre-heated, lightly greased waffle baker. Close lid quickly; do not open till done. Bake according to manufacture’s directions. When done, use a fork to lift waffle off grid. Makes 12 to 16 (4 inch) waffles.

This is the same recipe that I use, only I do it the fast way, no separating. When my waffle iron says they are done I flip them over and let them cook on the other side for about another minute, and they come out crunch.

I love my Better Homes and Gardens Cook book. They have the best sugar cookies too.

I guess this would be yet another plug for Better Homes and Gardens Cookbook, but it really is the best, any question I have, I juts look it up in there!
